There is always some left over rice in my house. Rice is treated as something very sacred in Asian nations and is highly respected. It would be the biggest disrespect to open rice cooker on the second day and just throw it out. I heard somewhere that this is how this dish was invented.
Today I feel sick with a cold. There is not a chance I will be strong enough to go shopping for ingredients for today's dinner. I will have to make do with what i have in the fridge. So there is rice, carrots, some lovely cooked bacon slices, green pepper and green onions, eggs. I always have garlic, soy sauce, sesame oil, and my frozen ginger. Ooooo! This is going to be good! Dinner will be served in no time!
I always start with heating the frying oil on low heat. So in oil goes a good and generous amount of ginger grated, chopped garlic, and a few drops of sesame oil. When the oil is heated add bacon and carrots and you can turn up the heat. Once it is looking crispy and browned add green peppers and salt it all with soy sauce (not too much, you can always add more at the end). Now it is time to add your cooked rice and mixing everything reheat all the grains.
When all the ingredients on the pan are almost done and rice is flavoured and mixed with all ingredient,s pull everything to the sides of the pan and break in two eggs. When they are nicely cooked mix with all the rest and your dinner is surprisingly ready! Has it been 30 minutes? Not even! Amazing! Don't you just love this? I will have time to be sick after this!
