Homemade Ramen

There is nothing better than a bowl of hot homemade soup. And it is even better if it is the popular lately ramen. My husband picked up two pig feet from a Chinese supermarket, I added four chicken legs and here we go! After rinsing I put all the legs in the biggest pot I had and added water. First I boiled it and picked up all the the dirty foam. Then added loads of fresh ginger (I freeze mine so I never ran out and it grates much easier), one whole onion, 2-3 cloves of garlic, soy sauce, Japanese sake to add sweetness, 2-3 Tablespoons of rice wine vinegar. And of course the source of all flavour, sesame oil. Start with 3-4 Tablespoons but you can always add more at the end of cooking. Let it simmer for 2 hours. Imagine yourself at this point that your ramen is almost ready!!


Now it is time to add loads of garlic. I would chop up the entire head since my family loves garlic. Taste your soup if it needs more soy sauce and sesame oil. If you like it spicy you can add some chili oil. Sprikle of white sesame is always pleasing to the eye and the palate.
Serve with chow mein noodles boiled according to directions, 6-7 minute boiled egg, some spinach or cabbage if you like. Also, if you like miso flavour, instead of adding more soy sauce at the end you can flavour your soup with a bit of miso paste. My, my! It smells like pig's feet in this place but I love this stuff!!! Got to go and eat!! Itadakimaaaaaasu!
