Never underestimate the power of a cheap, yet good Japanese bento style dinner. And you get a chance to squeeze in some spinach for your loved ones to be healthy and energetic! Here is my latest 40 minute creation. I realise that Japanese cuisine is all about specific ingredients and correct sauces. But in forty minutes and without spending a fortune on ingredients you must minimise and adapt. I am never picky and use what I have in the fridge. I don't give you measurements because you will have to taste your food to make it the way you like it. It is like love. Each of us has a different taste and style.
GREEN AND RED
Spinach and Veggies:
Chop up spinach with stems. Put in a pot and steam with a splash of soy sauce for a minute or two minutes just to blanch it. Drain. Let it cool a bit. Sprinkle with more soy sauce and sesame oil. Sprinkle with some white sesame seeds.You are done with spinach.
Steam some broccoli with a sprinkle of salt. Slice one tomato to add a bit of red colour to this bento. In Japanese culture it is very important how the food presents itself. Also, it is important to keep red, white and green principle. It looks appealing, but also, it gives you a different array of vitamins and minerals that you need!
Cook white short grain rice according to directions. I get my Japanese rice from the Korean supermarket or if I have no time I will just buy Italian Arborio or other short grain. It works for me and my family.Spinach and Veggies:

Tofu in a Gingered Dashi Soup Bath:
Cut up your medium or firm tofu in squares. Roll in flour, corn flour, onion powder and salt mix. Fry on a pan using enough oil to go half way of the tofu pieces. Fry until light golden brown.
The soup is easy. In a small pot add some grated fresh ginger, dashi fish stock, water, and a drop of sesame oil to flavour. Tofu is tasteless so it needs all of these ingredients to kick it a bit!
To plate it you will need a small bowl, spoon some soup on the bottom of it. Add a bit of sliced green onions for colour. Arrange your tofu yummies and you are done.
You could add some more veggies to add freshness to this meal. I chose one of my favourite salads. I am a big mayo lover so here I made Corn and Green Pepper Salad with Mayo. I never use salt nor black pepper here. It is light and mild so my son loves it.
This bento screams for some pickles, so important in Japanese culture of eating, but I don't have anything in the fridge. I will stay with a fresh tomato with your blessing!
