So I woke up Monday morning thinking what to make for a quick, yet fulfilling breakfast. I considered a can of GMO free can of corn from Poland and a bunch of cilantro and ...BOOM! Breakfast is on! My Monday Morning Mexican Salad.
a bunch of cilantro chopped
a bunch of green onions chopped
a can of corn, drained
one green onion chopped
daikon, white radish chopped I small cubes
two boiled eggs chopped
one avocado cubed
For dressing I used mayo and sour cream in 1:1 ratio. Sprinkle of salt, pepper, garlic powder, onion powder.
The salad is amazing if you are a Mexican food lover. You can eat it by itself with a handful of black beans mixed, in a tortilla or as a side dish to a slice of ham or steak. It is crunchy and creamy and yummy. If you are busy from your Christmas shopping or cleaning or cooking, this salad will satisfy you without a lot of work. So that you can spend more time on what really needs to be done before you have that perfect Christmas dinner or before you fly away to the places where warm white sand beaches don't end.
